When Charlie Galbally began a conversation about coffee with his local barista, Laurence Greenfield, they realised a dream to open their own place. Along with Charlie’s partner Tarsh, in 2011, the team opened The Daily Espresso Bar in Swanbourne, Perth. With Charlie’s history in hospitality and Laurence’s skills, this was a partnership made in coffee heaven.
With it’s rustic, industrial interior, The Daily is at the forefront of the burgeoning Perth coffee scene. As the head Barista, Laurence lives and breathes coffee. He loves all aspects of the coffee making process and has recently returned from Bali, with Five Senses, to discover the growing and harvesting of the beans that he serves. This trip left Laurence with a greater sense of appreciation for all of the people involved in getting the bags of beans to his front door. Laurence also thrives on educating himself on the industry and passing this knowledge on to his customers. In May, Laurence was the winner of the Lavazza ‘Baristar’ national championships held at the Melbourne International Coffee Expo (MICE). The first prize takes him to Italy with Lavazza to further his coffee education.
The Daily is an espresso bar serving brews from their Synesso Hydra Generation 2 machine. “We use this Synesso because it is a reputable, popular and reliable machine with features that make us capable of extracting the best out of the coffee we use.” Says Laurence. The coffee at The Daily changes weekly. The seasonal house blend is roasted by Five Senses and selected from their range of single origins. “It is seasonal to make sure we can offer the freshest crop roasted to perfection for our milk based beverages.” Says Laurence. “On the guest list we showcase Proud Mary roasted coffee each week with a mix-up of their blends and single origins along with a range of local, national and on occasion internationally sourced filter roast coffee.“ Laurence is conscious of working with specialty roasters who offer fair-trade coffee.
The menu at The Daily is complimentary to the coffee served. Fresh croissants, toasts, flavoured breads, bagels and specialty cakes are offered along with daily homemade muffins. “Our muffins, savoury and sweet, are the most talked about aside from our coffee.” says Tarsh.” We make them in-house, fresh each morning, and they are usually all gone by 9am. People like to come in early to ensure they don’t miss out.”
The Daily prides itself on its customer service from cheery, knowledgeable staff. “For the regular customers, Laurence and the team have already started processing their order as they walk in our door.” Says Tarsh. Laurence recommends looking out for the signs of a café dedicated to the pursuit of excellent coffee, and a barista who is keen and dedicated to the craft. “Don’t be afraid of asking questions as anyone who loves the industry, loves to share their knowledge.” Says Laurence,” The more you learn about coffee the easier it will be for you to find a great cuppa time after time.” Next time you pop into The Daily, introduce yourself and order the best coffee you’ve ever had brewed by a champion barista!
